Scallion-Mint Couscous

Serves:

10 people

Ingredients

  • 6 cups water
  • 1 stick butter
  • 1 tablespoon salt
  • 2 cinnamon sticks
  • 30 ounces plain cous cous (3 10-ounce boxes, or buy in bulk)
  • 1 1/2 cups sliced scallions
  • 1/2 cup fresh mint leaves, chopped

Directions

In a large saucepan, bring water, butter, salt, and cinnamon to a boil.  Add couscous, stir, cover, remove from heat, and let sit for five minutes.
Add scallions and fluff couscous with a fork.  Place in a serving dish and garnish with chopped mint.
